Cheats Wonton Noodle Soup – for One
This style of soups has versions from every culture I can think of, from the Europeans to the Middle East and throughout Asia. Hell even our own Indigenous mob have their very own Kangaroo tail soup (I have not been able to source the origins, so I am guessing it was a traditional food). Anyhow this dish is great because I always keep the ingredients in the cupboard, fridge and freezer. Its comfort food you can enjoy in minutes during hot and cold weather. That said this is my very own super fast version for one. I have many versions which I will post into the future. A trip to an Asian grocer is a must for a month of comfort food. 1 pkt Cambpell’s Real Consomme
50ml Kombu Tsuyu
1 pkt Prawn dumplings1 bunch Fresh Egg noodles
2 birds Eye chillies
1 piece of Ginger roughly sliced
3 Spring Onions thinly sliced
Small handful of Thai basil
Soy sauce and chilli to serve
1. Boil a large pot of water. Place the consomme, ginger and on chilli in a saucepan on medium heat.
2. When water boils, tease the egg noodles in your hands until the separate and become loose. Cook in the boiling water until al dente (1 min). Drain and cool in fresh running cold water. Place in serving bowl with a splash of oil to loosen again.
3. Place dumplings in boiling water cook to instructions.
4. Assemble the dish and eat with a selection of condiments depending on your mood.
